What’s more inviting than a fluffy vanilla cake filled with summer fruity notes? Nothing. Nothing is more inviting than that! Before you turn your nose at a cake mix, give this doctored up Vanilla and Orange Marmalade version a shot and be wowed by the simplicity. You don’t even have to tell anyone it wasn’t from scratch. Your secret is safe with me.

 Vanilla and Orange Marmalade Cake with Strawberry Filling Recipe


1 box Betty Crocker white cake mix
1/2 cup egg whites
3/4 cup milk
1/3 cup oil
2/3 cup yogurt or sour cream
1 tsp vanilla extract

pinch of sea salt


2/3 cup strawberry jam


2 cups salted butter, room temperature
8 cups icing sugar
1/4 heavy cream
2 tsp sea salt
1/2 cup orange marmalade

Drop or two of orange food colouring (optional)


In the bowl of a stand mixer add the cake mix and salt and give a quick whisk to break up any clumps. Add all the wet ingredients and mix until fully incorporated. Pour batter into 2 prepared 8 inch cake pans and bake according to box instructions. Let fully cool on a wire rack.

With the paddle attachment beat the butter until light and fluffy. Add in the remaining ingredients and mix on low until fully incorporated. Scrape down the sides and turn the mixer up to high and let beat for 5 minutes. 


Level each cooled cake layer. Place the bottom layer on a cake board or plate. Spread approx. 1 cup of buttercream on it and pipe a buttercream border around the edges. Fill with the strawberry jam. Place the top layer leveled side down and crumb coat. Refrigerate for 15 minutes. Coat with a final layer of buttercream and with your spatula or knife drag the tip in horizontal lines around the cake until you reach the top. Decorate with “Drenched in Diamonds” glittery sugar and garnish with strawberry cookies, buttercream swirls, and more glittery sugar.
