Mini “Ice Cream” Meringue Cones

INGREDIENTS 
Meringue Cookies:
– 4 Large Egg Whites, Room Temperature
– 1/2 tsp Cream of Tartar
– Pinch of Salt
– 1 c. Granulated Sugar
– 1 tsp Vanilla Extract
– Brown Food Coloring
– Piping Bags
– Star Piping Tip
“Ice Cream” Cone Assembly: 
– Mini Ice Cream Cones
– Melted Chocolate
INSTRUCTIONS
Meringue Cookies: 
– Preheat oven to 225 degrees and prepare baking sheets by lining with parchment paper. Set aside.
– In a stand mixer fitted with a whisk attachment, combine egg whites, cream of tartar and salt. Turn mixer to low speed until mixture becomes foamy and you see bubbles. Increase speed to high.
– Begin slowly add sugar, about 1 tablespoon at a time, waiting 15 seconds or so in between additions.
– Continue to beat mixture until thick and shiny. Mixture should have still peaks.
– By hand, carefully mix in vanilla extract.
– Divide your meringue mixture into two separate bowls. Dye half of your mixture using the brown food coloring. This will represent the “chocolate ice cream”.
– Place white meringue mixture into piping bag. Place brown meringue mixture in a separate piping bag. Cut tips of both bags and set aside.
– In a piping bag fitted with a star tip, place both of your meringue piping bags into the bottom and squeeze mixture down until you see half white and half brown meringue mixture coming out of the tip.
– Pipe your meringue cookies onto your prepared baking sheets. Try to match the size of the bottom of the meringue cookie with the top opening of the ice cream cone. Keep in mind your meringue cookies will spread slightly.
– Place meringue cookies in the oven for 45-50 minutes.
– Allow meringue cookies to set and cool for 30 minutes.
“Ice Cream” Cone Assembly: 
– Once meringue cookies have cooled, it is time to prepare and assemble your “ice cream cones”.
– Take your melted chocolate and carefully fill your mini ice cream cones.
– While chocolate is still wet, attach a meringue cookie to top of cone. Allow to set.
– Drizzle additional melted chocolate on top of meringue cookie.
– Finally, top with your favorite summer sprinkle mix.
– Allow to set and enjoy!
