Key Lime Crinkle Cookie Sandwiches

INGREDIENTS
 
Key Lime Crinkle Cookies:
– 1/2 c Butter, Softened
– 1 c. Granulated Sugar
– 1 Egg, Room Temperature
– 1/2 tsp Vanilla Extract
– 4 tbsp Fresh Lime Juice
– 2 tbsp Lime Zest
– Green Food Coloring (optional)
– 1 3/4 c Flour
– 1/2 tsp Salt
– 1/3 c. Sweetened Coconut Flakes
– 1/2 tsp Baking Soda
– 2 c Powdered Sugar
Key Lime Buttercream:
– 1/2 c Salted Butter, Softened
– 2 tsp Lime Zest
– 1/2 tsp Vanilla Extract
– 2 c Powdered Sugar
– 2 tbsp Fresh Lime Juice
– 1 tbsp Heavy Whipping Cream
Cookie Sandwich Assembly: 
– Optional: Piping Bag with Round Tip
INSTRUCTIONS
Key Lime Crinkle Cookies: 
– Preheat oven to 350 degrees. Line baking pan with parchment paper and set aside.
– Whisk together flour, salt and baking soda. Set aside.
– In a stand mixer fitted with a paddle attachment, cream butter and granulated sugar until light and fluffy. Approximately 3-5 minutes.
– Add in coconut flakes and mix until combined.
– Beat in egg.
– Add lime juice, zest, vanilla extract and mix until fully incorporated.
– Optional: add in a couple of drops of green food color if you want your cookies to have more of a green color. I added 3 drops to achieve the color you see here.
– Slowly add dry mixture into wet mixture and mix on low until just combined.
– Place dough in fridge for 15-30 minutes.
– Pour powdered sugar into a small bowl.
– After 15-30 minutes, pull dough from fridge and measure out 1.5 tbsp servings of dough and roll into balls.
– Roll balls into powdered sugar and place on baking pan.
– Bake cookies 7-8 minutes or until edges begin turning slightly brown. Allow cookies to sit on hot pan for 3-5 minutes to set before removing and placing on a cooling rack. Allow to cool completely.
Key Lime Buttercream:
– To make buttercream, combine salted butter and lime zest and beat until light and fluffy. Approximately 3-5 minutes.
– Beat in vanilla extract.
– Slowly add in powdered sugar and once it is all combined, increase speed to beat the buttercream for another several minutes.
– Add in lime juice and heavy whipping cream and continue to beat on high speed for 3 minutes.
Cookie Sandwich Assembly: 
– Pair up cookies in similar size for cookie sandwiches.
– Optional: place your buttercream into a piping bag fitted with a round tip and pipe buttercream in center of one of the cookies before sandwiching together. You can also just spread the buttercream onto your cookie if you don’t have a piping bag/tip.
– While buttercream is still wet, apply sprinkles to outer rim of cookie sandwiches.
– Allow cookie sandwiches to set.
